Chocolate Cupcakes with Vanilla Cream Frosting

Ingredients for Cupcakes:

  1. Flour 9 oz
  2. Granulated sugar 9 oz 
  3. Vegetable/ coconut oil 9 oz
  4. Cocoa powder 5 tablespoons
  5. Butter milk 6 oz
  6. Baking powder 1 teaspoon
  7. Baking soda 1/2 teaspoons 
  8. Pinch of salt 
  9. Vanilla extract 1 tablespoon
  10. 3 Eggs
  11. Cinnamon powder 1/4 teaspoon.
Cupcakes ready to baked
  1. Preheat the regular oven or convection oven at 350°f (180°c).
  2. Line a cupcake tray with cupcakes  linears.
  3. Sift the flour, sugar, cocoa, baking soda, baking powder and salt in a large bowl. Whisk the ingredients together by hand.
  4. In another bowl, combine oil, milk, egg and vanilla extract and beat with the help of whisk.
  5. Add the wet ingredients to the dry and gently mix the batter just to combine. Do not over mix or beat as this cupcakes can toughen up.
  6. Pour the batter almost to the top into the prepared cupcake pan and bake it for 12 to 15 min and in convection oven for 3 to 4 mins depending on your oven temperature or until they are firm in the middle and don’t appear damp. This recipe bakes fast.
  7. This batter is going to make around 13 to 14 cupcakes.
  8. Once baked, take them out of the tin and cool on a baking rack until cold.
Baked

Ingredients for Vanilla Buttercream Frosting:

  1. 3 cups confectioners’
  2.  sugar1 cup butter
  3. 1 teaspoon vanilla extract
  4. 1 to 2 tablespoons whipping cream
Cupcakes with Vanilla buttercream frosting

Method:

  1. In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.

  2. Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency. Add 2 to 3 drops of red food color if you want. 

  3. Frost the cupcakes with the buttercream frosting then sprinkle with some sprinkles on it to make more appealing.
